Springtime Sweet Potato and Leek Soup

Ingredients

  • 2 large sweet potatoes
  • 2 medium leeks
  • 1 medium onions
  • 3 cloves garlic
  • 4 cups chicken broth
  • 1 cup heavy cream
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork a few times and roast for 20-25 minutes, or until tender.
  2. Sauté leeks, onions, and garlic in a large pot until softened. Add roasted sweet potatoes, chicken broth, and heavy cream. Bring to a simmer and cook for 10-15 minutes, or until heated through.
