Summer Sunshine Stuffed Bell Peppers

Ingredients

  • any color 4 bell peppers
  • fresh or frozen 1 cup corn kernels
  • 15 oz 1 can black beans, drained and rinsed
  • Monterey Jack or Cheddar 1 cup shredded cheese
  • optional 1/4 cup chopped fresh cilantro
  • for roasting 2 tablespoons olive oil
  • to taste Salt and pepper

Instructions

  1. Preheat oven to 375°F (190°C). Cut off the tops of the bell peppers and remove seeds and membranes.
  2. In a large bowl, mix together corn, black beans, cheese, cilantro (if using), salt, and pepper.
