- any color 4 bell peppers
- fresh or frozen 1 cup corn kernels
- 15 oz 1 can black beans, drained and rinsed
- Monterey Jack or Cheddar 1 cup shredded cheese
- optional 1/4 cup chopped fresh cilantro
- for roasting 2 tablespoons olive oil
- to taste Salt and pepper
Instructions
- Preheat oven to 375°F (190°C). Cut off the tops of the bell peppers and remove seeds and membranes.
- In a large bowl, mix together corn, black beans, cheese, cilantro (if using), salt, and pepper.
