Spring Fling Stuffed Portobellos

Ingredients

  • 4 Portobello mushrooms
  • 1/4 cup Fresh parsley
  • 1/4 cup Fresh basil
  • 2 cloves Garlic
  • 1/2 cup Breadcrumbs
  • 1 cup Shredded mozzarella cheese
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Clean and prepare the portobello mushrooms by removing the stems and scraping out the gills.
  2. In a bowl, mix together parsley, basil, garlic, breadcrumbs, mozzarella cheese, salt, and pepper. Stuff each mushroom cap with the mixture and drizzle with olive oil.
