Ingredients
- 1 cup green or brown lentils
- 1 medium diced onion
- 2 cloves minced garlic
- 2 medium carrots
- 2 stalks celery
- 1 can diced tomatoes
- 4 cups chicken broth
- 2 tbsp apple cider vinegar
- 2 tbsp olive oil

Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, garlic, carrots, and celery, and cook until the vegetables are tender, about 10 minutes.
- Add the lentils, diced tomatoes, chicken broth, apple cider vinegar, salt, and pepper. Bring to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes, or until the lentils are tender.
